Another Gumbo Thread

This is the first time I've used a leftover turkey to make a turkey and andouille gumbo, and I have nothing else to do this weekend while it's single digits outside (perfect gumbo weather, by the way), so why not. The last thing I claim to be is an expert on gumbo, so I welcome all critiques.

It all started with cooking a turkey for Christmas. It was the largest bird I've ever seen - 25lbs. I named him Dwayne. Here's Dwayne with a coat of a homemade herb butter:



After hours in the oven, here's Dwayne in all of his glory:



The next day, what remained of Dwayne was used to make the turkey stock:

Now onto the actual gumbo. Starting with the mise en place:





Then came the roux - it got to a nice dark color. It was actually much darker than the picture shows:





While the roux was going, I browned the sausage. I prefer cutting it into half moons:



Next, adding the Trinity (and some garlic):



Stock goes in, it comes to a simmer, and the sausage goes in. Now there are two hours to kill, so why not enjoy a Trillium Peach Super Soak?



Finally, after a two hour simmer, the turkey meat, green onions, and parsley go in:



You have to skim the fat, and this is the best method I've found. You put a paper towel over the top and it soaks up the fat at the top:



And the final product, with of course some french bread from Reising's:

Fantastic

Only thing I would change is browning my sausage in the same pot as the gumbo so you don’t lose all those good bits in the skillet. You could do it in the oil right before you make the roux. Just a thought

I agree with that, also I wouldnt add my garlic in with the trinity, wait till the trinity is cooked then add the garlic.

This might be blasphemy but after Thanksgiving when I was making my stock, I put the cinnamon sticks I put in the cavity into the pot with the carcass, neck, onions etc. It was a different tasting stock, but the gumbo came out so damn good.

Get rid of all that skin from the stock and clean the bones more and skimming oil is hardly needed. Roast the bones first and it will be even less skimming

No two of us make gumbo the same way.

I’ll never change the way I make mine (the way my mom showed me), but I love seeing how everyone else does theirs.

I like my trinity cooked way down, so my compromise is that I brown my sausage and then cook down my trinity in that pan. It dirties up an extra pot/pan, but I find it simplifies my roux making/veggie cooking.

Looks great. Love the color.

This year I smoked a extra turkey thanksgiving weekend just to make a gumbo- seeing everyone’s posts convinced me to make that a tradition. I did a stock in crock pot with the carcass. Rich and Smokey.

Sure looks good thanks for the pics. Left over turkey gumbo has been a staple at our house for years. Smoked fried baked it dont matter put the left overs in a gumbo with some sausage and andouille it's good. Aint telling ya how you should do it just what I do I add garlic after I brown onions cook it too much it gets bitter. I dont add bell pepper till after that it also can get lost in the gravy. I like the green bits from bell pepper onion tops and parsley they more flavorful added later.
