alligator tail meat

I was gifted some nice cut and trimmed alligator tail meat.

I searched the TD food forum and discovered different alligator tail preparations....fried nuggets, Sauce Piquant, etouffee, chargrilled, smoked and more.

What is your favorite alligator tail recipe?

I prefer fried, but you really cant go wrong preparing any way youd like.

I have a friend that works at a gator farm. The jaw meat is the best you can get. He makes some mustard/hot sauce/ Worcestershire sauce marinade and then batters and fries them. I can eat my weight in that stuff.

Jowl meat is hard to beat. I grind the alligator meat and substitute it to make Turtle Soup.
I improvise using Brennan's recipe as the meat tastes the exact same.
I'll make a large pot of turtle soup and vacuum seal serving size portions for later.
IMO, soup > frying and serving like chicken nuggets.

My BIL is employed by a farm that has an alligato farm operation. Jowl meat is correct. Its the best you can get.

OP, alligator meat does well with brining. 1/4 cup of salt to 1/2 gallon of water. Bring for 8-12 hours. Then cook it any way you wish.

Go for the tenderloin. No trimming necessary, cut into 1/2 inch servings and fry.
