A new discovery at Costco - Pickled Red Onions

I’d never seen them there before, so I bought one ($7). They are amazing, which only means one thing, I’ll never find them there again.
I think I could eat them all, straight out the container. They gonna make pork tacos awesome!!!

Dude. These are the easiest thing to make and you can reuse the brine multiple times.
I always, ALWAYS, have a jar of pickled red onions in the fridge.
They are the best condiment.

Salmon is right, these are so easy to make and cost probably $1 total to make. Not that 7 bucks is a lot but you should give it a try. I always have some in the fridge

As they’ve said above. Easiest pickles to make. Almost unlimited variations you can do. I made this quart Monday. Cost about 50 cent

2 c vinegar
2 c water
1/3 c sugar
1/2-1 t salt
6 cloves
1 cinnamon stick
6 allspice berries
Bay leaf
12 peppercorns
1 lg jalapeño, sliced
Combine all except onions and peppers, Boil for 5 min.
Pack onions and peppers in clean jar(s). Pour hot vinegar mixture over onions. Cool. Refrigerate.

Here is my no-cook favorite. Simple. Some recipes boil the vinegar and pour over the onions, but to me it makes the onions mushy.
In a medium bowl, stir together 1 cup white vinegar, 2 teaspoons white sugar, and 2 teaspoons kosher salt.
Stir in 1 medium red onion (halved and thinly sliced) and 1 jalapeño chili (stemmed, halved lengthwise and seeded).
Cover and refrigerate at least 1 hour or up to 24 hours.
You can store any leftovers in a jar in the fridge.

My issue is neither the money nor the time, it’s that I can get a much tastier product tailored to my tastes for very little investment of either.

Try them on homemade pizza.
