A little reverse sear I did last night with pics

Got a nice little bone in from Albertsons for $6.99/lb. and reverse seared it.

Looks good. What was your temperature at the end of the slow cook step? What did you sear it on?

Primo at 150 to an internal of 118 then cranked it up to around 700 and seared to get the color and crust.

How long did it take at 150? How many did you cook?

I cooked one about 2 inches thick. I don't really know how long because I drank beer on the golf course then switched to vodka when I got home and and lost all sense of time. I would guess maybe 30-46 minutes, but I am honestly not sure.

I've failed at trying this in the oven. Tried it in the sous vide machine and it came out great.

Some complain about the length of time it takes, but not if you utilize your time, well...

No way you cooked it at 150 for 36 minutes. I've cooked mine at 250 for 40 minutes to get to 110 internal and achieve the reverse sear. Maybe you had too many white ones. Baw.

I put it at 160-170 over an hour, then sear.

Works very well (no need to bother with the grill).

yea still cant bring myself to reverse sear. get grill hot.
3 minutes each side. close vents leave on for another 3 minutes. boom perfect steak
