I guess that fish is supposed to look awesome but it looks like someone reeled it in out of the water, put it on a plate and sprinkled some parsley on it.

I didn't post pics of the garlic shrimp crostinis or the baby squid and razor clam tapas prep, also on a crostini with marinated peppers.

Those fish eyes don't look like anything I've seen when it comes straight out of the water. The fish looks roasted.

I'm sure that Serrano is a fine product, but the Iberico de Bellota is really a different animal, pardon the pun.

No offense taken. The apps ended up taking a back seat to many small potions of a shitload of large dishes. The octopus, chickpea and potato dish was excellent. Cory prepped it sous vide before charring on the grill. A treat.
