Guy is a lifelong meat processor I wouldnt guess website design is at the top of his list.

Whats true though is whats going on in this thread is a very bad idea. You simply dont AGE meat like this. You SPOIL MEAT

OTIS says and has taken courses in meat processing so dont hate.

i'm following his instructions and sending him daily updates and he says GOOD TO GO and the man can cook like a banshee so to the haters....

I'm gonna have to agree with Catman here. What are you going to trim off these individual steaks? What's going to be left? Let us know, you know, when you get out of the hospital.

Are ya'll kidding me? A lot of premier restaurants age their steaks. CAD will be fine.

Hm. I saw it Man Vs. Food , but I can't remember if they were individually cut steaks or whole racks..

I promise you there isnt a steakhouse (with an active license) that ages its steak individually. All will age whole cuts.

OTIS is WRONG on this one. He probably missed the course on FOOD SAFETY or he sought advice for ATT tech on steak aging.

YOU CANNOT AGE A STEAK INDIVIDUALLY. Letting them sit is spoiling the steak not aging them.

Spoilage bacteria is growing on those steaks. You would have to cut away almost everything to not have it. People age whole cuts with heavy fat caps to allow the steak to age whole having something to cut away thats not needed.

This is not an opinion.

Cook them soon and they will likely be fine. But its still a risk.

Do you text Otis for when you want to clean blowfish too?

You might get it right you might not. Otis took some courses.. The link I sent you stating otherwise was from a guy in the business since the 40s.. You choose who is more knowledgeable in the subject.
