1 - At what age did you first start cooking and what was the first food item you cooked?

I was probably around 9 or 10. My parents moved to south Alabama, and the house they bought had a commercial kitchen set up. A Wolf side by side oven/range. There was a wider gas oven with 6 gas burners above it, and a smaller gas oven with a griddle top that had a slot below it that could be used as a broiler. Knowing how much I loved Rice a Roni, that was probably the first thing I cooked. I also started grilling at a young age. My mom and sisters would get me to cook if my dad was working late.

2 - Have you ever worked in a commercial food operation? Doing what?

No, the closest I came was cooking in a homeless shelter on a missions trip to Houston. Me and one other guy made pancakes for about 2-3 hours one morning.

3 - What family member stands out in your memory as your favorite cook?

Before my grandmother had a stroke, her fried chicken and biscuits were the best. Really everything she cooked, but those were the best. Her sister in law lived next door and made the best chicken and dumplings from scratch, so holiday meals were awesome on that street.

4 - Are you the best cook in your immediate family? If no, then who?

I'd say yes. My wife can do great casseroles and baking, but when it comes to an entire meal I have her beat.

5 - How many meals a week do you eat out?

Other than lunch, not many. And that is just convenience since I work in a downtown area with tons of good options. I still brownbag it a few days a week though.

6 - Your favorite steak cut? Cooked how?

Toss up between ribeye and a thick filet. Medium rare over coals and wood.

7 - Your favorite chicken cut? Cooked how?

Thighs, fried.

8 - Your favorite pork cut? Cooked how?

Butt, smoked.

9 - What is your favorite comfort food?

Macaroni and cheese. I'm not picky either. It can be cafeteria style, blue box I make for the kids, or from scratch where I do it all.

10 - What ethnic cuisine is your favorite?

Probably Mexican or Asian.

11 - What is your favorite (US) food city?

Hard to pick just one. I grew up 90 miles from the gulf so anywhere with good seafood. You can get great BBQ, steaks, etc just about anywhere, but fresh seafood is the best.

12 - What is your favorite international food city?

Since my international travel is pretty much Nassau, Toronto, Montreal, and Montego Bay, and I was much younger on all of those trips, no real answer here.

13 - Do you have a favorite restaurant? If yes, name?

Yes, an old local place in my parents hometown. Always try to go there when we're visiting. Ezell's in Lavaca AL.

14 - What is your most favorite vegetable and cooking method?

Blackeyed peas simmered with some bacon or ham for a while. Scoop them into a bowl of crumbled cornbread and get tons of the pot liquor in there and go to town.

15 - What is your least favorite vegetable and cooking method?

I rarely cook root veggies. Other than carrots in a pot roast.

16 - What is your favorite meat (cut and cooking method)?

Bacon, cooked in the oven.

17 - What is your least favorite meat (cut and cooking method)?

Chicken breasts in a pan. Fine for quick meals but gets boring.

Steamer from Firehouse with some Cholula to dip it in.

Bacon, steak, and eggs, with scratch biscuits or French toast.

A McRib and a Shamrock Shake.

Dressing. So much better after a day in the fridge.

23 – What is your Go To Dish if you are cooking?

For a crowd, probably something I can easily scale up like pastas. Lasagna, spaghetti, Mac n Cheese. For the family, something with ground beef that can be cooked quickly like Chili or Tacos.

24 – Favorite Seafood dish?

Crab legs or boiled shrimp.

25 - Best Dish you have ever cooked?

The BCS Championship game in 2012. Dad bought a whole beef tenderloin. We sliced it to whatever thickness everyone wanted their steak. I made about a dozen twice baked potatoes. I had a huge charcoal grill at the time and set up a lower temp zone on the left. I put the steaks on with some wine soaked wood chips over the coals. Meanwhile I put a ton of charcoal in the chimney starter and sat it on the gas burner on high. I got them really going. Dumped them on the other side of the grill and raised them up to just below the grate. Did a sear at that point. I think the women made some other side dishes to go with it, but mainly the steaks and potatoes and plenty of Bookers.

2 - Have you ever worked in a commercial food operation? Doing what? I worked for the Pappas family in Houston for 3 years as a waiter.

3 - What family member stands out in your memory as your favorite cook? My gradmother and it ain't even close. I have posted her cornbread dressing recipe on here several times

4 - Are you the best cook in your immediate family? If no, then who? My wife is the best cook in our family....no pics.

1. Around 6-7 with my grandfather. Was always full breakfast. He actually taught me how to make his white breakfast gravy over biscuits first.
2.1 day as prep filling in for someone, food runner for a couple months.
3. Grandather no doubt with uncle as close second. Both taught me a ton, and still do.
4. Yes and sadly it isnt even close.
