2 easy side dishes to bring to company potluck

Single non-Martha Stewart Guy has been tasked to bring a side dish to our departments potluck. 25 people, age range is 30-60, all graduate degrees, Multicultural (Indian, Japanese, Asian, White)

Don't feel like i can just mail it in, so asking for ideas for a couple "complex" but simple sides to bring.

Macque choux was my first thought, too. Throw in some peeled shrimp (or diced smoked sausage or tasso) if you want it to be more substantial.

I also like a good black bean salad, esp with avocado.

Paula deen corn casserole. Super easy. Old people and kids love it.

Strawberry spinach salad. Spinach , sliced strawberries, sliced almonds or roasted pecan halves, feta cheese crumbles, then salad dressing (less is more).

church pot luck type stuff I believe will be frowned upon.

I might get away with a pasta salad that has fancier ingredients

I mean shite. I’ve Nevermind been to any company potluck where the coworkers judge me on the quality of the dish I bring. It’s free food for frick’s sake, and I’d probably make best friends with the dude that stopped at the bbq joint for a rack of ribs.

You’re really overthink8ng this. But, if you insist, just throw some capers on a pasta salad and call it real.

More of this is about what you can pull off properly given the circumstances. Do you bring the food when its time to eat, or beforehand some time and are expected to keep it hot or get it hot? Is there a way to get the food hot?

Man that was tough to listen to. But they use the hose pipe noodles which my grandmother always used. I lika it witha the brown gravy.

OP:

Make a coleslaw from the other thread; Piccadilly carrot soufflé ; orzo pasta with olive salad and shredded Parmesan cheese (cold)

I have to bring baked beans today. I’m lazy. 2 large cans Ranch Style beans, one diced onion, half diced green bell pepper, few pieces of bacon and a tube of Chisesi chili. Cook bacon, sauté vegetables in fat, add other ingredients stir, bring to heat and toss in oven for an hour. Or just keep heating on stove. Done. Feeds a lot.

Mexican street corn casserole.

Del Monte Whole Kernel Fire-Roasted Corn
Mayonnaise With Lime Juice
Tajin Fruit and Snack Seasoning
Cotija or parmesan cheese
Fresh Cilantro
Mix together, top with goat cheese, bake.

ETA: drain the corn.

edited to add - I went back and looked at those before. me. All are good. Here are some more of the 98,473 possible sides you could make and take.

Mix two or three cans of whole green beans with a can of diluted mushroom soup, a quarter cup of almond slithers and top with Durkies onion rings. Bake in 325 degree oven until bubbly - maybe 45 minutes. Just like Aunt Jean brought to every Thanksgiving lunch for the past 45 years. Not worthy of cooking blue ribbon, but everyone eats them.

Cook frozen Green (English) peas with a couple of potatoes peeled and cut up in them. (Good for strict vegetarians).

Make whole new potatoes, boiled with butter and parsley.

Do baked beans - 2 - 4 cans of Campbells (good) pork and beans, 1/2 - 1 cup chopped onions, 1/4 - 1/2 cup Bell peppers, 1 - 2 cloves garlic, chopped, 4 - 8 Tablespoons ketchup, 1 - 2 Tablespoons Worchester sauce. 1/4 - 1/2 cup brown sugar, 1 -2 Tablespoons yellow mustard, Salt and black pepper. If not worried about vegetarians, 1 - 2 cups fried bacon (crumbled) or pork BBQ (chopped) or smoked sausage (diced). Bake in covered bean dish for 45 minutes - 1 hour at 325 degrees F

Another addition - Humus and pita bread. Make three or four different kinds and lots of pita, cut into quarters or eights. If you like more then that, add a plate of radishes, cauliflower and feta cheese cubes along side the humus. Really fancy? Add some dried figs to the mix.
