Due to weather and other commitments, I’d like to make pulled pork in the crock pot. Should I basically just throw a rub on it then cook it in the crock pot on low for 8 hours then shred and let people sauce it as much as they want? Any certain rub I should try? Thanks for the advice.

Never made pulled pork in a crock pot but I have done Mississippi Roast about 500 times...lol. If I were attempting it, I would inject it with a little apple juice and rub it with your favorite rub. I make my own rub but there are several good commercial ones that will do just fine. Try some Sweet Rub O' Mine. You can find it at Academy.

It's going to be hard to get that bbq pit flavor in the pork unfortunately. To help that, and again...I've never tried this, but I'd probably put 1/2 teaspoon of liquid smoke in my apple juice injection and incorporate some smoked paprika in my rub.

I'd put about a 1/2" of liquid in the bottom, put the roast in, set it on high and let it go for 6-8 hours. Take the roast out, let it cool then pull it. Place the pulled meat in a chafing dish if you have one, lightly dust it with your rub again, glaze it with a thin sauce then cover it to stay warm.

for pork, I soak it in bourbon overnight, then pour the bourbon in the crock pot, put the roast in and cook it like that. Someitmes I'll put a little garlic and/or onion powder in the bourbon.

Heavily salt and pepper it. Sear it. Remove. Make a dark roux. Add in couple cups of sliced onion, some garlic, oregano, thyme. Brown onions. Add in stock. Add meat back in and braise (or transfer to crock). Cooke until tender. Little lemon juice at end.

You can do it in a pot in 4 hours. Turns out great.

ETA: By pot I mean in a pot on the stove.

I did a Cuban style in a crock at the beach a couple of years ago people still talk about. Google for recipes, but it involved OJ, lime juice, garlic, bay (?)

Try this:

I’ve done pulled pork in the crock pot a ton. It’s really easy. Crank it to high for an hour or 2 to start. Then, low for 6ish.

Done that many times. I would sear it all over first if you have a pot big enough. They make a ton of liquid and if you put it in there it can come out like boiled meat. Searing seems to help.

Rub, sear all over, Place a layer of thin sliced onion on bottom of the crock pot. Cook until done and add sauce if wanted.
