Need some new recipes/ideas for my kids

Feel like I'm in a rut with cooking for the kids. They don't like a ton, but still want to make sure and try some new things. Roasted Chicken, Red/White Beans, Spaghetti, Tacos, Hamburger Steak, Shrimp Stew, and Breakfast seem to be the default meals we go to because we know they will eat it. Just wanting to try some new things...

Got a smoker? I found out my kids LOVE smoked meats, and it opened up a loooot of options (both the meat itself and the leftovers to be repurposed).

Get some boneless/skinless chicken breasts, cut them into strips and make fried chicken fingers and pair that with some mac & cheese.

Learn how to make homemade pizzas and get them involved with the making of the dough, topping selection, etc.

Panne' pork chops or round steak with roasted vegetables or cubed potatoes cooked stovetop with a bit of onion and garlic until golden brown.

Jambalaya has always been a big hit at my house for kids, and a 1 pot meal.

Fried seafood like fish or shrimp with French fries and a garden salad.

Here’s one that’s a hit with kids (and adults):
Jacked up S.O.S.
2 lb ground beef
4 cups water
1 can cream of celery soup
1 can golden mushroom soup
1/2 onion diced
1 tbs butter or margarine
1 tbs garlic powder
1 tbs black pepper
1 tbs salt
2 boxes of frozen garlic toast

In a 6 qt pot melt butter on high heat then add ground beef and brown, stirring often while adding salt, pepper and garlic powder. Once meat is browned add onions and stir often for 5 minutes. Add soups and water and boil on medium heat for 20 minutes or until sauce thickens. Prepare garlic toast in oven per directions on box. Spoon mixture onto toast until running off sides. Serve hot and enjoy.

I was actually just gifted a Traeger Grill by my brother-in-law when he moved into a new house with another grill built in.

A good way to get kids interested in trying new foods is to get them involved in the cooking process.

Something as simple as cutting, blanching, and shocking broccoli can have a positive impact on their willingness to eat it because they were responsible for its preparation.

Pizza rolls - very simple as your kids will enjoy making them and eating the finished product. Inexpensive meal as the pizza dough and pepperonis cost $2.50 each.

Pillsbury Pizza crust - dust counter-top or parchment paper with AP flour so dough won't stick. Roll flat , cut into equal length pieces. Pictured below are 4 pcs., I've since started cutting into 8 pcs. since it's much easier to roll.

Pepperoni - place on dough
Cheese - pepper jack, smoked provolone, mozzarella - whatever you want
Roll together, place on non-stick cooking sheet, and bake per Pillsbury directions.
Prior to baking, you can brush rolls with an egg wash if you want for a golden brown finish. Or brush finished rolls with melted butter, garlic, and Parm cheese.
Dip in marinara sauce or basil pesto.





Another option, buy pastry puff dough and cut into 4 squares. Kids can make their own individual pizza with whatever toppings they like

Rotisserie chicken Enchilada skillet- basically a deconstructed enchiladas
Lasagna pasta- ground meat, jar of tomato sauce, bow tie pasta and ricotta/mozzarella cheese
Chicken stroganoff- they love the noodles and I make this is slow cooker
Gyros
French bread pizza- use a French bread as the dough and they can top how they like
Buffalo chicken egg rolls- shockingly this was a big hit
Chicken wings- cook in instant pot and finish in oven. Super easy and serve with fries
Ramen noodle stir fry- use stir fry veggies and chicken with some sesame oil and soy sauce, discard packet and just use the noodles

Some of my kids faves.

A freshly made alfredo sauce is simple and quick. That with some boiled tortellini makes a nice meal.

There are a number of things that can be made with a bag of frozen meatballs.

One favorite at my house is French dip poboys. Manda's roast beef, Swiss cheese, toasted under the broiler on crispy French bread. The au-jus can be as simple as a can of Campbell's beef consume' and an envelope of brown gravy mix with a little water.

There are some easy no-boil manicotti recipes that you can stuff with ricotta, beef, cheeses, spinach, or sausages cover and bake. Fun for kids to help stuffing the shells.

Try an fried cube steak in Italian bread crumb. Still one of my favorite things to eat. Used to love helping my mom make that and French bread pizza.

Tuna a la King

Sauté 2 cups of chopped onion and 1 cup chopped celery in 4 T butter. When soft, add a can of Cream of Mushroom soup and a can of water. Blend well over med high heat. Add 2 cans of tuna, drained, Bring to a simmer.Add pepper and salt to taste. Cover and cut heat to low....simmer 10 minutes. Adjust seasoning.

Toast a few hamburger buns. Pour the sauce over them and hand each kid a fork.

Profit.
