I'm up early but the bird will go on later. I brined mine yesterday(22 pounder), rinsed it well last night and injected it then it went in the fridge to air dry before I season the outside then onto the Pit Boss in a semi spatchcock. The carcass WILL be made into stock for a turkey andouille gumbo.

Up since 3 am. Turkey will go into the smoker at 6 am.

I spatchcocked my 14lb turkey. I'm thinking 3 hours with a 30 min rest. So I'm aiming for 8:00-8:30.

I have a 14 pounder as well. Sitting at 250 on the KJ with a mix of sugar cane and hickory. Smells damn good.

Chimney is lit. Will build the fire soon. Spatchcock 18lber, a 6lb breast, beef tenderloin and some wood ducks to follow.

Where do you get sugarcane? I could just get some from a sugarcane field but is there a certain time of the year to get it?

If the grill is up to temp by 5 I usually pull it off by 9 or 10 and then let it cool to slice for noon. And I get several hours outside with no one bothering me.

I got the cane at Ideal Market on Airline in Metry. They have it every year around this time. $4 for a 6’ stalk.

Just put two 18 pounders in the WSM. Spatchcocked. Not eating until mid-afternoon so I’m fine if it takes some time. First year smoking two.

Spatcock a 14 but will only tale 2 1/2 to 3 hours so chilling , drinking coffee.

We’re not going to our party til like 3, so I’m putting mine on at 930/10. I may have to crack a beer before then though.
