Thinking about starting up a dessert shop

What would you like to see in it?

So far, the general list would include:

A variety of Cakes
Cheese cake
A variety of pies
Danishes/pastries
a few ice cream flavors
some generic candy bars, nothing exotic

anything someone would like to add?

I think a dessert shop would be better, no one wants to eat cake in the desert.

In BR, I presume? Do they have a non-chain one (baskin Robbins, etc.)? I think this would do well with all of the students.

I would suggest you visit a few in NOLA to get some ideas...Sucre, Brocato's, La Boulangerie, La Divina Gelateria, Lucky You! and there is a new candy store on Decatur and Iberville.

There was a place in Charleston that was a dessert only place- they also served after dinner drinks (grasshoppers, sambuca, baileys on the rocks, chocolate martinis.....)

You could do that.

you need a focus/theme. Is it going to be homecooking? regional? upscale and exotic?

Just tossing random shite out isn't going to work.

Yes...this place was right on the market and very good....if you googled it I am sure you could find it.

Intermezzo in Buckhead is another place...upscale dessert and drinks, but honeslty, this would go a lot better in New Orleans, but it would give you ideas.

Pick one thing and be great at it. I suggest cupcakes (seems to be the trendy thing). Look at the lines at Magnolia bakery in NYC, Crave in Houston, Sprinkles in LA.

BR supports it's local bakeries pretty well (Ambrosia, Cake Palace, Baums), maybe something small in a heavy restaruant area like Perkins Rowe or Town Center would do well.

Baton Rouge isn't a very driveable city, and noone wants to drive across town after eating dinner to grab dessert, better to build it in one of the few places you would have foot traffic.

Yea, the place that was in Charleston was right next door to a restaurant that the same family owned.

Another reason for cupcakes is that customers might pay 2 or 3 bucks for a gourmet cupcake, but if you have a big cake there with 30 slices selling for 3 bucks a piece, they'll do the math in their head and say "I'm not paying for a piece of a $90 cake." Also, cupcakes = smaller batches when cooking and you won't be left with half of a cake or pie come closing time.

As far as I know, the only gelato we have is in Whole Foods... no homemade ice cream that I know of. We have Counter Culture which is frozen yogurt and they have done really well.

This thread reminds me of the cake shop by Essen/Perkins that says "Breakfest". I was like, "You want me to stop all festivities? What gives you the right!?"

I think and ice cream or gelato shop with an old time theme would do well. I mean NOLA has a ton of successful ones, and its hot down here for a good 8 months a year....not to mention the student population.
