Just planted hot banana today. We grew up with a jar of pickled hot bananas on the table most days. I haven’t grown any in a few years, so it was time.

Which variety? I have grown the Belgian Hot Wax before for pickling to eat with things like chicken, pizza and several other dishes.

They grow yellow and look just like mild banana peppers but pack the punch of a jalapeno, which is very mild, but just enough heat to get your attention.

Emerald fire, paquime, and chicimeca jalapeños. Lemon drop, Congo habanero, tiburon and habanada.

Currently have the following all in containers: Mammoth jalapeño, habanero, hot banana, Anaheim, fresno, cayenne, 7 pot, ghost, cherry bomb hybrid, Trinidad scorpion chocolate, caterpillar red, and scotch bonnet yellow. I’ll be making hot sauces with the majority of these. I might dry and grind a few to add to some seasoning though. I’ve been wanting to make a BBQ rub with some chilies, so I’ll probably try that this fall.

This will be my first year attempting to make hot sauce. I’ll likely make the habanero sauce recipe that you posted a couple weeks ago and then make several fermented sauces.

Yeah Troy does a great job with his peppers. Have you tried his verde sauce also?

I haven’t tried that one yet, but if I see some I’ll scoop some up. Champange’s had a bunch of the red hot sauce if anyone wants a bottle.

Anyone here grown White ghost before? These are what I’m most excited about. A white hot sauce will be really cool looking.

Congo habanero is a red habanero. I started plants from seed a few years ago, and I've over-wintered a plant for the past few years. It really puts on a lot of fruits on its second year. If you're diligent with taking care of it over the winter, it can take off and turn into a small tree.

And it's hot as hell.

No lie, I worked with a lady that planted HABS and after a few years of care they looked like BIG bushes around her house. She would bring in multiple gallon zip lock bags full to the office to share.
