Find a Low mileage Isuzu trooper with manual shift and V6. The earlier models with the Chevy 60 degree V-6 are incredible and inexpensive to buy and maintain.
I know a guy that does 100% restorations on them, he usually has 1 or 2 for sale.

If a Honda Pilot made it through just get whatever 4wd vehicle you want with good tires and you will be fine. Tires are 90% of the battle. You don't need full on mud tires, a good all terrain tire will work like the Toyo open country or similar.

Pilot did well, there was a muddy hill that I spun around a good bit and covered the undercarriage. Some tight areas make you go a few feet off the dirt road and those were more sketchy.
What I am a bit concerned about is if I go down there and a big rain hits while I’m out, I might need to stick around for two days to let it dry. Snow is also a variable.

I know a guy that has one that is in pieces right now. He put a new TH400 and a crate motor in it, then he decided he wanted to have it painted to match his bass boat, I guess he ran out of money when he found out how much paint costs. I'm gonna make him an offer on it soon.

Gladiator Sport with Max Tow. You have to get Max Tow. You’ll have the axles as the Rubicon minus the lockers. Buy aftermarket lockers from a 4wd shop.
Buying the sport will save you a lot of money. You won’t have the same transfer case as the rubicon but if you’re not going to start rockcrawling, you don’t need it.
You don’t have to be a Jeep guy to enjoy a Gladiator. The longer wheelbase smoothed the ride from a wrangler. I like Tacos but the tow rating of the Gladiator is much higher.

Xterra 2005 or newer, with Offroad package so you get the rear locker (be sure to read up on them if you get a locker. example: you put in 4wl before you engage it).
Or like someone else said, if you can afford a wrangler they have lockers on both axles. lockers, tires, and clearance are king.

The reason your RPMs were higher with the cruise set is because your torque converter was unlocked. When it is unlocked, you are operating at reduced efficiency. Reduced efficiency in a transmission means more heat.
Running for extended periods at highway speeds with your torque converter unlocked isn't a good idea with 99% of the transmissions made after 1995.
At the very least, get that shitty mopar ATF +4 out of there and fill with valvoline full syn.
ETA: was the main reason an AW4 went in my old jeep in college when the transmission failed from running 35s on the wrong gears and accelerating to redline for every gear
