Has anyone successfully used a poultice of baking soda and water to get a red wine stain out of quartzite?

No, but I have effectively used Club Soda to get red wine stains out of clothing. Might be worth a try.

How bad is the stain? Do you seal your stone? Wine shouldn’t stain unless it’s left for a period of time. If that’s the case you may be in trouble.

We have marble counters and my wife is a damn magician when it comes to removing stains. I’ll question her regarding methods, but it’s some mix of household stuff she coats over the stain, then puts a little plastic wrap over it to sit for a day or two.

If truly only overnight, I’d think you may need to re seal your stone? Quartzite is the hardest stone so I wouldn’t think red wine should stain it that quickly?

Did you call the company that installed it? They may have some suggestions
