I've fallen terribly far behind on the Marvel Cinematic Universe, as of late. I've not seen Endgame, but I know who dies, and such. Is there any chance a viewer could enjoy Falcon and the Winter Soldier without having a clue about recent goings-on in the characters' lives, in your estimation?

Absolutely.
Both characters are barely in Endgame. As long as you know how Endgame ends between them and Steve, you are fine.

Believe the show runner came out and said he hopes people don’t go crazy with the theories with this show because everything is much more straightforward in it than in WandaVision.

Doubtful. This seems more straight forward whereas wandavision naturally led viewers into wild theories
