Just be honest with them and tell them you had been interviewing with multiple companies and, while you thought the other opportunity was over, they came back and made an offer.
Thank them for the opportunity they gave you.
Apologize for leaving them in a lurch.
Give notice if you can.
Do not ghost them.
You may need them again down the road...
