Pressure canning gets things too hot and you will wind up with limp pickles with little to no "snap" to them when you bite into them.

I use a hot water bath to can my pickled vegetables and never let the water get above 185 degrees F and leave quart jars in for 20 minutes before removing them to cool on the countertop. That way they do form a good seal and the vegetables stay crispy in the jars.

Just out of curiosity I did a little bit of searching on the topic. Botulism toxin is killed at 185 degrees after 5 minutes. The spores are killed at 240 degrees. And a pH of 4.6 or lower prevents botulism toxin growth from the spores.

Things to keep in mind for safe canning. USDA has a canning guide if anyone would like to do more reading on it. Don’t just take my advice. I wouldn’t want anyone to get sick, so I encourage people to learn the right way.

You only need to pressure can low acid foods, like snap beans or carrots. For pickled in vinegar stuff, water baths are sufficient.

Anyone dry their cucumbers in a dehydrator? I saw a youtube video where they make salt & vinegar chips out of them. Looks good.

I read books and watched who knows how many hours of YouTube videos. I’ve screwed up all sorts of things. Best way to learn bees is having some and trying not to fail. I’ve had more frustrating days than I can count, but when you get a good honey crop or have a grafted queen come back mated, it’s a lot of fun.

How does the Chinese Tallow look in your area? I’m in the Brandon MS area and it’s just about to pop.

My tallow is looking good.


Our accidental squash plant(didn't know we bought and did not want) is the most beautiful plant we have. Initially all the fruit rotted. Now, not doing that. May have been from a change in fertilizer.

I'm sure there's some in my area, but I don't really see any around my neighborhood. From what other beekepers in my area are saying, it's on like Donkey Kong right now.

My bees are bringing in a lot of very light colored pollen. Occasionally I see some dark orange colored pollen. I'm not sure of their sources, but they have them.

There's plenty of pastures and agriculture in the area. So, it could be a good variety of things.

Man I've never had a garden wait so long to start producing.

I'm loaded down with green tomatoes and finally my first one is turning red. I've got some monsters on the plants though.

I've started getting cucumbers, jalapenos, bellpeppers, poblano, and mystery peppers (still don't know what they are).

My bean plants are really taking off. I had trouble getting them established.

My larger okra plants have quite a few okra starting on them. Won't be long till I'm buried in those.

Amazingly, I don't think I've watered my garden since sometime in April.

I have a ton of cucumbers and a dehydrator I've still never used. Will probably try it on Sunday.

I think I’ve hooked up the irrigation one time. That’s it.

Yeah my okra is taking off also. But my beans are looking like crap again. Oh well. If that’s the trade off for having literally everything else in my garden doing great, I’ll sacrifice the beans every time.

I've got some cucumbers and some jalapenos, but not really enough of either. I was going to combine them after work this evening and try pickling them together

Help

With all this rain, I can’t keep the slugs off of my squash plants. Any tips on killing these bastards?? I’ve sprinkled Sevin around the plant, used Sevin spray on main vine, sprayed plant with Neem. These slugs are immune.
