All of our farm lakes got overpopulated because of release the bass. In my opinion it is the best blackened freshwater fish there is. Won't beat perch or walleye in the fryer but blacken it like redfish, you'll never throw one less than two lbs back.
My creedo, is throw the biggest two back and eat the rest.

Maybe marsh bass are different.
Absolutely! I think the brackish (salt) water changes the taste versus a true freshwater bass.
We used to catch these by the bushel near Gum Cove; they were delicious.

I find toledo bend bass are very fishy. I think it's cause thier diet is more shad and marsh bass is more crawfish

Only issues I ever had an issue with was people A)not abiding by the slot limit on the lake and B) keeping every single bass they catch over 4lbs. Keeping smaller bass helps with the genetics and available food in lakes/ponds, that's supposedly why so many bigger fish were caught back in the day (catch and release was never really practiced before the OG fishing shows)

Hell I think it is a southern thing except for Louisiana. There's a limit on bass. Catch up to the limit, clean them and enjoy. Don't think twice about it. You catch and eat them or they will die and sink to the bottom and the turtles and catfish will eat them. Catch a 12 pounder and clean it!

im from a very, very country part of the midwest and maybe every fifth person keeps and eats bass. i think it's just a regional thing.

Can I grill or bake the bass?
Sure but they will fall apart so don’t over cook . My brother used to put a couple small bass filets, a can of green beans and a can of those whole potatoes, salt pepper and butter, cover in Saran Wrap and microwave. He would eat the shite out of them like that.

the same folks who cry about someone eating bass are usually the same ones who want to snatch big female bass off the nest, drag them to the weigh in, then throw them back in the water at the landing after the weigh in.

The bass tournaments and tours teach people how to pull females off of beds... fricking insanity. Doesn't surprise me, there are people who want to change the speckled trout size limit to make it to where you can only keep female speckled trout or the largest, oldest males. Insanity.

My grandfather would twitch while watching the bass shows and the fishermen throwing the fish back in. My credo is if it's 10 (inches) it's in and if its over 16 it goes back in.

I eat bass as long as they aren’t larger than 10 lbs.

I think there's something to this. Inland bass can have a different taste. Small bass should be harvested, though, and eaten. We have a gas station near our lake where we take our small bass. Usually within 15 minutes of showing up, word has gotten out and people show up to get them. The station is in a very poor rural neighborhood.

I personally think that bass are some of the tastiest swimming fish, especially in Louisiana? Why do fisherman (especially yankees) frown upon harvesting bass? I don't keep bass over two pounds. The one pound marsh bass are tastier than speckled trout IMO.
Can anyone enlighten me on this?
My Grandad would fish Toledo Bend river bottoms almost everyday (not Sundays) when he retired. Lived less than a mile as the crow flies from lake and all the landowners in the area would drop off a key every time they changed locks on their gates. He was used as a fish finder by local sports reporters on TV, being referred to "look for this old man and his dog, if they stay in one spot more than 15 minutes jump in there when he does move on, if he keeps moving you do too."
Grandad's 20 acres of pasture had a minimum 5 lb bass head on every fence post. Until well into his eighties his freezer always had fish, bass mainly. Although at 83 he pulled out the biggest catfish he ever caught from one of secret honey holes way back in the woods in a slough off the Old River, 47 lb'er that grunted like a pig, so loud the deaf old man could hear it plainly.
Grandad only threw back the State Regs said had to go back.

its better this way if you ask me.
marinate fillets in Italian dressing, hot sauce, and a little mustard.
put on a griddle at about 225-250degrees. Only seasoning you need is Paul prudhommes blackened redfish magic. make sure to cover entire fillet with season. Takes a couple minutes each side.
Once you take if off grill sprinkle some parmesian cheese.
