Matt Courville's place on 49 north of Laffy is who I used before I started doing my own. When you walk in its impressive how clean everything is. Exit 4 I believe.

What are you looking to get done?

For hamburger or fresh sausage, nobody beats Adrienne’s Grocery. They don’t do smoked sausage or jerky or anything like that. For the burger I get 10% ribeye fat mixed with mine and it’s excellent.

What do you want done to it?

If you want smoked sausage, there is a guy in Port Barre that was the butcher for Champagnes in Leonville for years, Bourques in Port Barre for years, and now the butcher for Kirk Martin. You won't get better smoked sausage.

Not exactly in Lafayette, but Leger's in Port Barre has the best sausage, both smoked and fresh, that you're going to find.

I’ve used a bunch all around. Now I stick with Adrians for my ground meat and Best Stop for my smoked sausage.

Courville is expensive. He is an extremely talented taxidermist and a really nice guy, but he charges too much for a deer to get processed.

I’d go with Chadley’s or Adrian’s grocery for good meat and a very fair price.
