Costco Prime Whole Brisket on sale

I couldn't pass it up when I saw the price. Prime, untrimmed whole brisket for $2.99 lb. and I picked one up yesterday.
Got it home and trimmed it up and made my brine to soak it in for about 2 weeks and will make corned beef with some of it and pastrami with the rest.

That’s the normal price sans covid.

Been pretty steady at $3.49 in BR pre COVID. I was wanting to do one tomorrow. Thanks for the tip.

What time should I come over?

Sams had them for $2.79 Prime untrimmed last week.
The $2.99 is just getting back into line with what it was before the China Flu.

Also Albertsons has $2.99lb, $1.97lb if you have app coupon for those who don't have Costco access.

Correct they are choice. Just was putting it out for those that don't have a Costco membership.

i defy someone to taste a bit of difference after both have been on the smoker for 15 hours.

They will taste the same but the prime with the higher fat content will be mo juicy
Can you post what it is you are doing to achieve this? It is something I have been wanting to try my self.

No Problem, recipe for the brine is as follows:
1 1/2 gallon water
1 1/2 cups Kosher salt
1 1/2 tsp. Potassium Nitrate----Saltpeter
7 Bay leaves
1 tsp. Ground cloves
1 1/2 tsp. All-Spice berries
2 tsp. Peppercorns
2 tsp. Mustard seed
1 1/2 cups white vinegar
3/4 cups sugar
8 cloves garlic minced
Put all ingredients in a large enough pot and bring to a boil while you trim the brisket. Let it boil for several minutes to get all the stuff well blended. Remove the pot from the stove, let it cool to room temperature and pour over the meat in a food safe container.
Place the container in your fridge and make sure it is fully covered in brine. Every day, flip the meat to make sure it is evenly brined. Let this brine for up to 2 weeks.
To cook, remove from brine and lightly rinse. Place the meat in a large enough pot and add enough water to fully cover the meat and bring to a boil. Cook until fork tender----usually 3+ hours.
I will use the thickest part of the brisket for corned beef and the tail piece will go on the smoker to make pastrami since the same brine is used to make both.
ETA: When I posted this I forgot to mention the size of my brisket. It is a good 14 lb. hunk of meat so you can downsize the recipe to the size brisket you are going to do.
Many briskets will be good if only using 1 gallon of water and then reduce all other seasonings a bit.

Ya
It’s pretty easy to discern the choice briskets that are posted here vs the prime. They look like
