Beef is graded solely on the ribeye. A “prime” brisket just means that it came off of a cow that had a prime ribeye. Theoretically, a “choice” brisket could have better marbling than a given “prime” brisket.

“Theoretically”

Of course there is a reason why they inspect a specific portion of the rib determine there grade of the cow. As they say, “ribeye don’t lie”

What ignorance did I spew? Asking if Albertsons sold choice for the same price Costco sold prime? Regardless of whether or not you think an advantage to prime always exists, why not buy prime if the price is the same? You have a better chance at higher quality in the prime and you’re spending the same amount.

I pretty much only buy prime for ribeyes anyways. It’s a waste on tenderloins and other stuff so I buy what looks best from a marbling perspective, not grade.

Harry Soo and 4 You-tubers did a cook of wagyu, prime, choice, and select. They then did a blind taste test and ranked them.

The rankings varied. Some ranked wagyu first, and one guy ranked it last. Only one guy ranked them perfectly in order of grade.

But the average showed wagyu and prime tied for first, then choice, then select. Harry said there is a lot of variation among prime, and the one they cooked was "probably one in a hundred" quality. So the grades proved relevant on average, albeit among a small test group.

I've cooked many choice, and they were good, but the absolutely best brisket I ever smoked was the first prime I ever bought from Sam's. People raved about it, and it was damned good. It wasn't that much more expensive, so I get the prime now when available.

great video. i watched the whole thing.

i must be living under a rock because i've never seen anyone lay a brisket on top of a chunk of wood before. of course i really haven't kept up with the new 'hot and fast' trend either so maybe this is a thing. i've been out of the loop for a long time.

that guy from cali seemed incredibly cool and down to earth. that rice dish he made on the smoker looked pretty damn good too.
