With this quarantine I find myself listening to almost 8 hours of music a day. I’ve run out of music. List your top 3 and I’ll try to listen to them.

Not possible. Could be Devin Townsend today, Zeppelin tomorrow, something different every day. I've been playing Doja Cat mixes the past few weeks. Doja, H.E.R., Gavin Turek, Shinobi Ninja and others.

1) U2 - 1987 - Joshua Tree - fist love and always hard to let go
2) Jerry Garcia Band - 1991 - Jerry Garcia Band (Live at Warfield Theater in 1990) - I cry a little everytime I hear Jerry sing Dylan's "I Shall Be Released" and then listen to the guitar and bass solos, which comforts me
3) Modest Mouse - 2004 - Good News for People Who Love Bad News - I could pick 3 or 4 of their albums and just can't stop listening to them. His music is good for every emotion - happy, sad, lonely, party, chill, love, ...

3 is too tough! How about a Top 10, and even that is pushing it! My 1st 'real' album was Led Zeppelin's 1st album when I was 13 back in 1970, been collecting records ever since...

Soft Machine- Volume Two
Kinks- Arthur
Pink Floyd- Piper at the Gates of Dawn
The Pretty Things- S.F. Sorrow
Rolling Stones- Their Satanic Majestys Request
Traffic- Mr. Fantasy
Hawkwind- In Search of Space
Johnny Winter- Second Winter
Led Zeppelin- Houses of the Holy
Black Sabbath- Paranoid

All Things Must Pass - George Harrison
Viva Terlingua - Jerry Jeff Walker

Third one is very tough, gotta be a Beatles album, either abbey road, pepper or revolver

Well, your musical preferences may be far different from mine. That said, I will offer a glimpse of what I'm listening to at the moment, rather than 3 favorite albums.

Sina Doering - has produced a couple dozen collaborations, including covers and originals. Wide variety of genres from Rammstein or Iron Butterfly to Radiohead to Dream Theater to the Beatles to jazz and cabaret. All very excellently done. Some of her collaborators also have work of their own worth a listen. Small sample:

(here with Moriah Formica, Evanescence cover)
What You Want

(here with Andrei Cerbu, original evokes Santana)
Latin Jam

(here percussion track for Andres Marzzucco, original instrumental)
Dejame Una Palabra

Mia Morris (original, nice fuzzy bass line)
What Made You Famous

If you like any of this, some of it is available on streaming services. Some is not, but I may be able to get you a CD or audio files.

ZZ Top- Fandango
