Salmon, tuna tacos, shrimp tacos, redfish, and gumbo. We had a couple of those twice.

Anyway like I was sayin' shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir fried. There's pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp, shrimp soup, shrimp stew, shrimp salad, shrimp and potatoes, shrimp burger, shrimp sandwich. That- that's about it
Sorry, I couldn't resist.

Frog legs.
I’m pretty sure there was a Bishop that said Frogs and alligator are “seafood.”

Oh hell yeah!
One of GOAT 'stealth' ingredients.
I've taken to adding it to all kind of things.

Have you tried doing a meatless Indian style dish? I like chickpeas & spinach in a masala simmer sauce over rice. It pairs nicely with veggie samosas. If you’re in a hurry, Trader Joe’s has decent veggie samosas in the freezer section.
You could also do a really lovely grilled cheese on homage focaccia with tomato soup.

So far you have had two days where this matters.

Edit - I missed where you already did shrimp tacos. Oops.
She probably will get sick of seafood every single night so you could always do meat quesadillas for yourself and let her do grilled or roasted veggies in hers.

I admire your conviction but it’s going to be a long 40 days.

Spicy Ground Shrimp with Noodles, from Peche
It calls for chicken broth, but if you must avoid that use shrimp stock made from the shells.

So damn simple but me and the kids eat it up. Peel some shrimp or get frozen peeled. Defrost and season in cavendars. Heat some olive oil and cook for a few minutes. We eat them plain with some sides but I'm sure you could toss them in salad or serve over rice.
