Not sure how crappie didn't make the op list. That's up there with walleye for me. As far as fishing, nothing beats large mouth bass casting. I'm not a fan of simply watching a bobber in complete silence.
Unagi is another good answer.
Smelt. We used to sit on the pier drinking beer all night while hauling up net after net full of smelt. It was a team effort. One would lower and hoist the net, another would scoop the bounty from the net with a long pole that had a can on the end of it, and another would take a scissors, snip off the head and gut them. Battered, then you had deep fried goodness. I miss smelt.
I used to love smoked chubs and ciscoes when I had access to them in the North.

A friend of my ex-father-in-law used to bring him undersized catfish from an illegal slat trap. We’re talking 8 and 9 inch fish. He would de head, gut and skin them, and then fry them whole. Best fish I’ve ever tasted.

Of those I've personally had, it's walleye then crappie. They served walleye in most of the restaurants in Ohio. It was excellent.
I've heard that sauger are better than those, but I've never had it before.

Without reading the thread...if sac-a-lait wasn't named best tasting at least five times, I will have lost faith in the FDB.
