The real problem is that the US uses corn based ethanol. Corn syrup is also used to sweeten just about every processed food item. So by using corn based ethanol, it has only served to raise prices on food and results in more inflation, pretty much across the board.

I’m just wondering with the significant amount of cane grown in the US why would
We not use the sugar from that to ferment ethanol?

It would cut the price of corn (potentially) raise prices of sugar (potentially) and maybe make incentivize people not eat sugary foods, if they stay away from high fructose corn syrup
