I enjoy Chef John's recipes on Food Wishes. In his latest episode he recreates the Popeyes Chicken Sandwhich.

Yeah I’ve watched a lot and he is a struggle to listen to. But he does good stuff.

Nice video.

I get unnecessarily irate when breading falls off like that. I’m glad he pointed it out instead of ignoring it.

Not that anyone asked, but I get better results frying at 325-ish than the 350-375 he used.

Protip that I think I heard from Sean Brock (maybe?): on the last flour dredge, pour some of the marinade/wet ingredients into the batter so it lumps up. It'll make the surface way crunchier/flakier.

Hopefully Popeyes sandwich 2.0 incorporates the spicy into the chicken itself not just a spicy mayo.
