What must be done to end the plague of soggy, homecut fries?

McDonalds fries are the best but they are not real food.
Cane’s crinkled cut are the best outside of that.
Why so many soggy, home cut fries from major chains and local diners?

They need to twice fry to get the crispy texture
That said if those 2 places are your good standards for fries then you have horrible taste

Also all of those places freeze fries before the second cooking. It’s a science thing Kenji Lopez-Alt explained and explored a few years ago.

This. Fry them till almost done, remove from the grease and let it come back to temperature then fry them again.
Lightly salt them when they come out the second time.

Canes fries are absolute shite, especially for what you pay for those shriveled up pieces of chicken that comes with them.

The best fries in the world are at the Fairgrounds horse races in NOLA. They fry the shite out of them. I go at least once a year and get two or three orders while I’m there

You gotta open the box as soon as you get it or the steam will make your food soggy as shite.

I went to South 73 Lunchroom in Dutchtown for the first time the other day and their fries are great.

Had some of these at a pub in Ireland a couple months ago and they were some of the best fries I’ve had in a while. Canoe shaped allows for the fry to be crisp all the way around and easier for dipping.

A buddy of mine that owns a BBQ place told me this. I now order extra crispy fries whenever I’m out. It’s a game changer if done right. My two favorite fast food places have notoriously soggy fries (Milo’s and Chick Fil-a).

Aside from McDonalds, all fast food fries are pretty much shite.

Agree on the twice fry - we cut about ten pounds at a time, fry for a minute at 400, then freeze. Come back and fry whenever you want at 350-375. Always right on.
