Because it's essentially useless to the body so it just passes right through. If you do that you are literally shitting for the sake of shitting.
You shite to excrete waste from the body, if you don't have much waste you don't shite as often. If you are ingesting a bunch of useless stuff (like fiber) you are going to shite it out. It's pretty simple.

You aren't alone baw, I'm the same way. Metamucil helps a bunch. Doesn't make me go everyday, but when I do go it is way better.

Back in October, it used to be 2-3 times a day.
