Anyone have a good breakfast casserole recipe?

My wife (no pics) and I usually make breakfast for the week on Sundays so we can get up and go. Sometimes we will just make a ton of pigs in a blanket or every once in a while she will do a casserole with eggs, hashbrowns, breakfast sausage, etc.

Does anyone have a good go-to dish?

You can make a frittata out of damn near anything, and eggs. Literally, leeks and Gruyere, tomatoes and bacon...just find a temp and time that works for your pie pan and roll with it.

Frittatas reheat amazingly well.

Not a casserole, but how about healthy muffins? The whole wheat 1970s favorite Morning Glory muffins are stuffed full of apples, nuts, raisins, coconut, etc. You can make a batch on Sun, stick leftovers in the freezer, and then pull out two muffins each AM and pop into the toaster oven to reheat while you’re getting dressed.

Every time we have tried muffins I get hungry too quick and end up eating my lunch pretty early.

It weird because I used to not be able to eat breakfast years ago. I'd almost get sick to my stomach if I tried. Then ever since I went through BMT, I have to have something to eat in the morning, especially with some kind of meat. Cereal, muffins, oatmeal, etc. just doesn't cut it anymore.

layer 9x13 glass pan with store bought biscuits, beat 6 eggs, add cooked sausage, bacon or ham. top w/cheddar cheese and bake. Leftovers nuke really well too.

I add green onions also.

Sub out the biscuit for cubed potato and this is pretty much what i have planned for this coming week.

I'll have to try with the biscuit another week and see which one we like better.

I’ve always liked making a French Toast casserole. It’s basically bread pudding with whole slices of Texas Toast. You can top it with crumbled bacon or ground Jimmy Dean sausage. There’s a ton of recipes on the internet

No, I don't have it.

It's more of a bread than a typical egg casserole. Off the top of my head, it's Bisquick (two cups maybe?), pound of breakfast sausage browned with some onion, only one egg, grated swiss cheese, a quarter cup of mayo (which seems odd, but somehow works), a bit of grated parmesean, salt, pepper, and a couple dashes of hot sauce stirred into a batter and baked in a pan. I can't recall if it needs any milk to come together, though.

I love it and I'm pissed that I can't get it to show anymore.

I like a breakfast casserole with grits instead of bread/biscuit, my wife makes one this way. I don't have her recipe, but I'm sure there are plenty versions out there

My mom's recipe. It's awesome. Adjust to your taste.

8 eggs
1 tsp dry mustard
1 tsp onion salt
Pepper to taste
2 1/4 cup milk
1 lb ground sausage, slightly browned and drained
1/2 lb cheddar cheese, shredded (2 cups)
8 slices bread, torn into cubes

Beat together the eggs, dry mustard, onion salt, pepper, and milk. Stir in the sausage, cheese, and bread. Spread in a greased 9x13 baking dish. Cover and refrigerate overnight. Bake at 325 for one hour.

Re: muffins, the trick is 100% whole wheat, load em with more fiber from the apples, and lots of nuts. If you need more protein/fats, split and slather with nut butter. You can add grated zucchini, chopped spinach, shredded carrot. They’re like a smoothie, in baked good form.

Cook a cup of grits (regular, not instant) with salt and black pepper. When fully cooked, add butter and gruyere cheese to your liking - we like a lot. Cook tubed sausage in small chunks until done and drain on paper towel. Add cooled sausage to grits. Crack three eggs, add a tablespoon of chives, a splash of heavy cream, whip and stir into the grits with the cooked sausage. Sprinkle more cheese over top and bake until firm. Will last several day sin the fridge with no problems and heats well in a bowl in the microwave.

Use regular or hot sausage, depending on your preference. We have used smoked sausage, but the country sausage works better.

This is a good casserole when overnight company is coming. Sometimes, we will add two or three scrambled eggs to the mixture so that there are chunks/bits of scrambled egg in the mixture.

Not sure how it'll hold up for the entire week, but if you're looking for savory rather than sweet, I've made this around Christmastime for the past several years and folks love it. Something completely different than what they're used to with other breakfast casseroles:

This is for all my future padnas that are looking for Zilla's sausage bread recipe and the images are dead, and they use the search feature:

Zilla's Sausage Bread
Makes a great Christmas gift for friends or for a brunch.

Brown together and drain well:
1 lb. HOT breakfast sausage
1/2 cup onion, finely chopped

In bowl, mix:
1/2 to 3/4 cup parmesan cheese
1 cup grated swiss cheese
1 beaten egg
2/3 cup milk
1/4 cup mayonnaise (not miracle whip)
1/4 teaspoon Tabasco sauce (optional)
1/2 teaspoon salt (do not use more | optional)
2 tablespoons parsley
2 cups Bisquick Mix

Mix all ingredients together, pour into greased 8'' x 8'' pan
OR
Line muffin tin with paper liners and spray liners lightly with cooking oil spray. Muffins brown and DON'T stick...WORKS GREAT!

Bake at 400 degrees for 25-30 minutes.

Note: A double recipe makes 7 mini-loaves or 24 to 36 muffins. Fill mini-loaf pans or muffin tins 2/3 full.
