For the most part I eat ducks because I love to hunt them. They aren’t my favorite wild game to eat but if I shoot them, I feel obligated to eat them. But on the other hand, teal and specklebellys are different, I could eat them a couple times a week. I never turn down a limit of teal from anyone.

On the flip side, the same guys complaining about guys not eating them are the same complaining about too many flat bill hunters taking up their land. If duck tasted like filet mignot the duck leases would be going for 3 times as much.

what about ducks that get mounted? they don't get eaten by those who kill them...

I hunt less than a week a year and give a lot of duck away and still have plenty left for gumbo, etc. My nephew makes sausage from the breasts that's really good, though.

It either needs to be very rare, or cooked till it falls apart. I’ve got lots of good duck recipes - but yes I mostly breast them out.

I want to try to soups-vide breasts

Not so fast, my friend. Yes a medium rare mallard breast is great, but a long, slow pot roast can be excellent, and done correctly, not dry.

This may be Food Board, but what I do:

Brown whole ducks in bacon fat.
Add smoked sausage and diced apples and onion, making sure to stuff cavities.
After veggies are tender, deglaze with Port.
Cover, and place in the oven on 325.
Go to deer stand for evening hunt.
3 hours later you’ll have something special.

I serve with wild rice w dried cherries and roasted pecans stirred in and mustard greens or similar.

Never eaten ducks till I tried this recipe. Now I never give them away.
Duck recipe
Recipe is for 10 medium size ducks so adjust accordingly. Need to cook outside.

1- stick unsalted butter
1 - 2 oz jar Paul Prudhomme's blackened redfish seasoning
10 - ducks

Melt butter, add 2 oz jar seasoning, mix well - will make a paste.
Cube duck breast in dice size cubes
Mix cubes in paste set aside

Need 8 to 10" cast iron skillet and a burner.

Put cast iron skillet on burner and get white hot. Take a serving spoon of duck breast and put in skillet. Will smoke and catch on fire. Continuously stir for exactly 60 seconds. No more no less. They are done after this. Put skillet back on burner, get white hot, and repeat.
