Marinate in 1/3 cup sake, 1/3 cup mirin, 3 tbsp soy sauce, 1/4 cup brown sugar, and 1/3 cup miso paste. Sear in a cast iron skillet for several minutes and then place the skillet under the broiler. Top with green onions.

I use this recipe for cod (replacing sea bass which is too expensive) and it is excellent. Decided to try it on the pork chops one night and loved it.

Breaded and fried.

Make an egg wash, dip your chop, into a plate of Progresso Italian style bread crumbs, coat both sides evenly, into your oil at 350 until nicely browned on both sides.

My mom made them this way when we were kids
Season with salt pepper and garlic powder, dip in egg wash. Dip in Italian bread crumbs I double dip mine. Been eating them this way all my life. Always Steve with sweet corn and salad

This thread got me thinking about pork chops, and curious to look for variations on the theme of frying them. I found three that interested me and I'm probably going to try them all eventually.

The first was a very heavily seasoned buttermilk dredged and floured version.
Buttermilk Fried Pork Chops


The second was a naked chop, with Dominican seasoning and uses lime juice for flavor.

The third type had a coating of Indian spices, like Garam Masala and Turmeric.

We used this one. The Vietnamese. Awesome combo of sweet end salty. Highly recommend.

This. I like to sauté some shiitake mushrooms in a little olive oil and garlic then, after it cools, add frozen spinach that’s been thawed, squeezed dry, and chopped, along with bread crumbs, Parmesan cheese, and a beaten egg. That makes a great stuffing. I had a vegetarian friend who just made a burger patty out of the stuffing and he loved it. But the possibilities are endless.

Just stuff it, man.

Doing this very same thing for tonight's meal. I have some chops from the freezer thawing and will trim them, use my meat hammer to pound them thin, egg wash, Italian bread crumbs and fry.

I'll be fixing either potatoes au gratin or mashed potatoes and gravy to go with them. Haven't made up my mind on that part just yet.

TexJoy Steak seasoning is great on chops. Better would be Tony’s on chops and dredge in flour that has black pepper and garlic powder and fry them up with green beans with onion, new potatoes and crispy bacon!!
