We’re heading there Saturday for our game day tradition brunch. Is the new rooftop bar going to be open for the home opener?

It is not going to be ready until early next Spring probably. Certainly not until after football season is over.

Because you used an ambiguous "there" prior to the the pronoun, Chimes, people will read it with the subject of your message first, "chimes roof top bar", and most people will read it like you're going to the roof top bar specifically.
"chimes roof top bar, I'm headed there, will it be open before the game?"
Properly worded - "I'm headed to Chimes before the game, will the rooftop bar be open?"
