Something to kickstart the new year. Murakami (i like his style and some of the translations are hilarious) or Vonnegut are usually my go-tos.

The Martian -Andy Weir

Good Omens - Gaiman and Pratchett

Pretty much any Terry Pratchett, but Eric is one of my favorites. Mort is great too.

Little Big Man could almost be considered historical fiction, but it's very funny. Return of Little Big Man ain't bad either.

Hitchhiker's Guide to the Galaxy Series by Douglas Adams.
It's 5 (6) books.

Handling Sin by Michael Malone. If you are from the South, you'll get a kick out of it.

Catch 22.

May be too low brow for you, but Lamb: the Gospel According to Biff, Christ's Childhood Pal is laugh out loud funny. Fool is also quite good. Both by Christopher Moore.

You sound like a guy who would like Tom Robbins, though. Start with Jitterbug Perfume.

I've been contemplating reading Huckleberry Finn for the first time since I was required to read it.

R.A. Wilson's Illuminatus! trilogy is funny (but not light reading).
Confederacy of Dunces (obviously)

I was going to say this as well. One of my favorites. Some of the best satire on humanity.

Forrest Gump, by Winston Groome.
It's one of the few books that's BETTER after the movie, because you can hear Tom Hank as Forrest Gump as you read. Not nearly as serious as the movie. The movie was funny, but they were trying to be serious, and make some sort of statement.

Groome, doesn't come across that way, and it's uproariously funny. His second effort was forced and not funny because of it.

I would cautiously recommend this to save for "last" - in my estimation, there is no book that can exceed this one for the category, particularly if you throw in "military". Mind you, I read the book very early in my military career, but it is so accurate in tone, if not specifics, that it boggles the imagination, and I joined the army over 40 years after the events depicted.

ETA: And the Douglas Adams Hitchhiker's Guide series would be right there with Catch-22.
