Planning on crabbing in pointe aux chenes with some drop nets, what is the preferred bait?
chicken neck, turkey neck or anything else?

beef melt always produced well for us but it's not as easy to secure to the net.

Fresh bait like herring or cigar minnows always works best for me.
But the easiest is cans of cat food. Go to like dollar general and buy the cheapest they have. Punch some holes in all sides, not too many just 5-6 total. Then take some wire and go through the holes to secure it to your trap. Craps can't take it anywhere, has a strong smell, and is very easy.

Find the leg quarters on sale and buy a couple 10# bags. Crabs get thick in the Chene and will eat up some bait

If you catch some lady fish, use those. If not, leg quarters work just fine.

I use leg quarters and my buddy uses melt. Both work every time, but I find leg quarters easier to work with.

It's the cheapest option I have, besides salmon carcasses. Chicken always gets them in the pot.

Turkey neck is the bait of choice in PAC. Chicken leg quarters are next. Fresh trout heads are very good also. I have tried frozen trout heads in the past and couldn't pay a crab to eat it. Bring plenty of bait as the crabs will eat them up and the gar fish will also steal your bait

Trout heads. But if don't have any use Chicken Quarters. I was crabbing next to a guy with quarters and I had turkey necks. He was catching non stop and we were getting the leftovers.

Does the meat have to be sour or good to go fresh from store?
