Bacon wrapped pineapple chutney pork loin (pics)

I've been wanting to learn how to spiral cut a pork loin and found out it's stupid easy.
Ingredients:
5 lb pork lion
1 pineapple
1 yellow bell pepper
2 onions
4 Serrano peppers
Rum



Spiral cut- you tube has a bunch of videos



Chop up and purée the pineapple, onion, peppers, add a splash of rum (I use Kraken)




Pour mixture onto the loin, roll it up and bacon wrap. A bacon weave would be better.



It's going on the smoker today. I'm going to use pecan wood to smoke. I'll post finished product pictures later.
