What if I put a qualifier that it is a delivery vehicle for solid foods (ie. not dips).

You still get things like caprese on crostini hors d'oeuvres and the like. You can plug the definition, but one that doesn't have a ton of qualifiers probably needs to be built from the ground up.

While I agree I would never say "poboy sandwich", if you google it, you will be surprised how many people use that term so yes, a poboy is a sandwich.

Every culture has a sandwich of some sort or fashion. Food on the go is a requirement of human life and sandwiches have long been the preferred and technologically possible means/method.

Sure, but even the strictest of sandwich definitions (meat between two slices of bread) would engulf hamburgers, so saying that hamburgers aren't sandwiches would require the definition to be either tautological(sandwiches are things we call sandwiches) or absurdly arbitrary (sandwiches are meats between two slices of bread except for when we call meat between two slices of bread something other than a sandwich).
Frankly, I find hotdogs fit far more easily under the "sandwich" heading than I do "open faced sandwiches" which seem to defy the entire purpose of the sandwich to begin with.

Food between bread = sandwich. Not just meat. Which is why a grilled cheese is a sandwich. But a hot dog is food that is in between bread. Therefore a sandwich

So calzones, stromboli, and meat pies are sandwiches? Popeyes apple pie? Two Ritz crackers with cheese in the middle? Peanut butter cheese crackers? That definition would appear to ensnare all of the preceding.

My definition of bread always required some kind of rising/leavening.
Yes, I now realize we have to define "bread" in order to define "sandwich"

technically the hotdog bun is all one piece, until it falls apart. Is that when it becomes a sandwich?

That strikes me as an awful slender reed. Also, if I put chili in a bread bowl and put the hollowed out piece resting on top, that makes it fit the definition. In the same way, if I have a sausage kolache, that isn't a sandwich, but if I split the bread it is. Strikes me as an arbitrary distinction without a real difference.

The Taco is another discussion similar to this hotdog one. And then there are several other Mexican items like tortas, quesidillas, burritos to enter the discussion of sandwich or not.
P.S.
lots of unleavened breads out there used for sandwiches yet still breads. If specifically yeast leavening required for bread, then we get into: is cornbread a bread?

These plus tacos are basically the Mexican 'version' of a sandwich.
Same as a Gyro is a middle-eastern 'version' of a sandwich.
ETA: A sandwich is a food that is typically made to be eaten by hand, that uses some type of wrapping (bread, etc...) to be a delivery vehicle for another food.
