That's weird. She tells me I am the best pipe fitter around.

You don't have to deal with shite. HVAC can be ok unless you're in a fricking attic in the summer. Bricklayer is hard work and not that great of pay.

Kind of a vague question.
By "Best" what exactly do you want to know? Best pay? Best quality of life? Best work to pay ratio? Best work available in a given area?

I would say instrument tech. In plants. They are few and far between which equals high pay and lots of job openings. Also easy to move up in.

My experience is in the industrial market...
Electricians and Instrument Techs probably have the best jobs
Boilermakers, Pipefitters, and Welders probably have the most opportunity

Does CNC machinist fall into this category. My brother used to be one, and working at such strict tolerances, the material and machines had to stay in an air conditioned environment and so he got to work in the A/C all day. Basically it's my understanding you just program the machine and it does all the work.

How was the pay? I guess I'm curious about the best quality of life and pay.

I think pretty decent. Around $25/hour outside of Dallas. And this was probably 15 years ago, so I'm sure it's higher now.

Plumber.
Nobody's calling an electrician out at 3am billing at 3-400 bucks an hour because a light doesn't work.
Let that sewage start coming back through a toilet, though.
