Is boudin poor people food?

I've tried it a few times and never cared for it.
To me, it seems like a LA version of tamales...which is a poor people food that has been 'culturally appropriated' by hispsters in food trucks and now everyone believes it's great.

Lots of really great food was/is poor people food.

There is an awesome youtube documentary on it. It was developed as way to use the whole pig during hard times. After the depression they tended to use better ingredients.
