Does a business' insurance policy cover cash taken during a robbery? In this case it was probably like $80, but what about a big haul of several thousand out of a safe?

Back in the 80s, Fast Track was insured for all cash on premises...they beat it into our young heads to not argue with these dumb sombitches, give em the money and live to flip more burgers.

Absolutely. Any chain restaurant and convenience store does. And it's got a substantial amount of coverage. This is to encourage any manager to comply with robbers and not worry about the money more so than it is to protect revenue. The rub is in the money-drop procedures. Exxon on the run is a master of this. If an employee doesn't money-drop on schedule/amount and gets robbed, they're fired and can face criminal charges if it looks like inside job.

If the cashier were to have shot the guy, he simply would have had the owner "lose' the video tape, and tell the cops the robber got rough with him and pointed the gun in his face and there was a struggle.

Yes. They'll adjust policies to match the max amount they should have any time.
