It is modest but I am very proud of my kitchen blade collection. Between the wusthof and the shun asian chef, I am not sure which is my favorite. The wasabis I picked up from Target when they went on clearance. As it turns out, they are pretty good blades. And the chicago cutlery knife is no laughing matter. It is my goto if i have to deal with dried/smoked meats or bones.

I think I have that same magnet......other than that I have a bunch of crap.....save one decent chefs knife.....maybe Ill get a shun at some point.....but not having one doesn't inhibit my flavors.

Ive never used a whetstone successfully. I have messed up two cheaper blades in the past so I dont mess with them anymore.
I use a worksharp ken onion edition about every 9 months or so to keep my blades on point, with a regular ole steel in between for keeping the edge crisp.
I dont care what yall have. Put some pics up dangit. We got a heinkel eversharp set for a wedding gift. I hated it. I actually gave the big block set away to my in laws because it got in the way. The bread knife was awesome but wasnt worth keeping the whole set around for.

Basically a whole set of Shun Classics and Wusthoff Brisket knife, and a Shun my BIL brought back from Japan (works for Honda).

I used to use wustoff but I got tired of being so cautious with them. A chef buddy of mine told me his kitchen uses Dexter Russel's and they just keep a sharpening stick nearby.

Now that is sweet!! I really want the filet knife but the bread knife is probably next on my acquisition list. I do like that brisket slicer. Did you buy it in a store or did you order it online?

Brisket knife came from Ebay, Sur La Table carries it online only, basically saved shipping by using EBay.

Shun is what I want but I'm having a hard time justifying $1700 for the set. I just don't cook enough to warrant that price. I may do the Henckels set with a Shun Asian Chef's Knife

This is what we did, we started with like a basic 7pc set with block it was around $400 about 8 years ago, then the specialty knives were mostly Xmas gifts from family. I would recommend the curved boning knife to anyone, its $100 bucks and is great for trimming any kind of meat. I use it a ton.

Knives are just not anything I care about. I'm still using whatever the heck people gave us for wedding presents 18 years ago. Some are Chicago with no block and every piece has a broken or bent tip from the DW using them to pry something

A complete set of Ginsu from 20 or 30 years ago. Have never sharpened them and they will still cut through a can and slice a tomato.
