I don't go to nice restaurants with my older brother anymore. He really will go to a fine-dining restaurant, order a steak well done, and then ask for ketchup. It makes you want to slit your wrists.

I think the type of food and drink served is the biggest determining factor, with the decorations and floor/bar setup being a close second.

For instance, if you want to attract a business professional crowd for happy hour, you need to have a good number of craft beers on tap and in bottle and a good wine selection for the ladies, in addition to a lighter food menu similar to tapas. You also want to make sure the venue is quieter than most, as a lot of the professional types will want to talk business and not be distracted by some music.

I'd have a place similar to Beausoleil. Great cocktails, creative food, upbeat atmosphere, located near wealthy people, but just under the radar enough to not be the token special occasion spot for trashy people.

Your typical popular high end places attract birthdays, anniversaries, graduations, etc. for people who don't regularly dine out and don't know how to act. No thanks.

Dude, he's awful. Smacks when he eats, calls the server by whistling or shouting, and his diet consists of fried chicken, steak, and french fries. He's in his late 30's. We grew up in a nice neighborhood and in a cultured home with manners and we don't know what the frick happened to him. He's the only member of our family who acts that way. It's embarrassing.
