Grilled Chicken Breasts Three Ways..... Mad Hunky

Earlier today I prepped some chicken breasts three different ways. Two smaller breasts were sliced and stuffed with ham and one with a chunk of colby/jack cheese and the other with pepperjack cheese and both of those were wrapped with bacon. next three with sliced Hasselback style and two had slices of fresh lemon stuffed in the slices and the third had ham and tomato slices in them. All of the chicken was seasoned with Mad Hunky Hot Whang! Chicken Rub.

Got the Keg heated and set to cook the chicken indirect. Here it is at the start of the cook.



About halfway through the I added grated parmesan cheese and tomato sauce to the bigger one with the tomato slices.



The Lemon stuffed breasts.



About time to add a couple of slices of provalone.



Cheese added and a apricot jalapeno glaze added to the bacon wrapped breasts.



Olive oil rubbed potatoes with kosher salt



Time to eat! Also had cornbread dressing and mixed veggies.



Pretty darn tasty!!!

I haven't been in a good while, probably since the owner passed away. This is a rowdy crowd with partying on their minds, so I think a boiler room fish fry is the ticket.

Hubs cooked, following my instructions as I was trapped in a long, rainy, foggy commute. Chicken thighs braised w/onion, yellow/red peppers, garlic, tomato purée, white wine, chopped kale....served over Barilla protein plus angel hair pasta, w/some steamed broccoli w/lemon & garlic toast. He did a fine job, except he forgets to taste as he goes, so it needed a little salt & a hit of chili flakes. Lemon icebox pie for dessert....my 2017 & no dessert resolution didn't last very long.

That's some dry looking dressing. Otherwise, everything else looks good.

I'm really not trying to be an arse, but do you eat anything that can be identified in a picture? 3 days in a row I cannot tell what your food is.
