My biggest issue is I hate beans. I think I could do vegan if I didn't hate the texture.
But taco salads minus the meat are very tasty and filling. Sweet potatos with peanut butter or sriacha. Baked potatos with broccoli. Veggie stir fry.

I read the book and watched the documentary Fast Food Nation. It's pretty disgusting the wholesale corporate slaughter that takes place in order to feed the fast food industry. This got me thinking about it years ago.

The issue with store bought meat is that it's "processed." The other issue is the amount of meat we eat. You think people even 100 years ago ate meat 3 meals a day? I think there is nothing wrong with going vegan. I run with a few vegans/plant based people and they are very fast and the recovery is impressive. In fact my buddy was on the cover of Runners World.

I'm not really one for following recipes, but I just bought Thug Kitchen's cookbook yesterday ... amazon had it on sale for $2.99, I suggest it if it's still on sale, if not check out their website. They are simple dishes with stuff you have around the house.
Honestly, google is your friend. If you have a craving for something, you can almost always find a veg friendly version online. Gumbo, jambalaya, tacos, chili, etc.
Don't believe the BS that you will be eating a salad every meal. You can make a badass salad though. If you find yourself craving stuff you had before (burgers, fried something), grocery stores have these frozen vegetarian friendly versions. Yes they are made of soy (not all of them), and no soy is not going to kill you - for those who are going to have something about it. Gardein has a good burger and beyond meat is another company to check out.
i eat a lot of meals with rice, beans, sautéed veggies. It doesn't really get old for me. Don't get caught up in eating the same thing all the time so you don't get bored with it.
Giving up meat is not that big of a deal, so don't let others give you a hard time for it. If it makes your body feel better, keep at it! It's worth the health benefits. If it doesn't work out, even doing it once or twice a week could make a big difference in the way you feel. Good luck

Yotam Ottolenghi Is not a vegetarian, but many of his middle eastern style recipes are. He has some very popular cookbooks. Many of his recipes can be found online. He writes a column for a British newspaper where you can find some examples of his style.

I could never be a vegetarian. Ever. However, I do try to eat less "processed" meats. I kill 2 deer and raise 50 meat chickens a year. I also buy a half beef from the local butcher.

Yes, don't do it. You feel better initially because you remove the other crap from your diet. But, you do NOT get all of the proteins from plants alone.
The reason cows and gorillas can eat grass and plants and still survive is because they have separate stomachs to digest fiber (which you can't do) into short chain fatty acids. So even though they eat plants, their getting most of their energy from fats.
You can get all the nutrients you require from meat. You don't require anything else, anyone who says otherwise is selling you something.
The world runs on fatty acids; you, cows, horses...we just have to use different processes to get there.

Dude it's pretty easy to get the recommended 60g of protein a day from plants.

Ummmm, I've been all meat for nearly 4 months. I've done it for six months nearly two yrs ago. People do live on all meat and are very healthy.
You cannot deny the fact that cows have the ability to digest fiber and turn it into short chain fatty acids and you do not.
Congrats on working against your own physiology and not understanding basic human biology to try and argue for a dogma.

In Europe, if you mention that you are a vegetarian, the response is "so what." In much of America, people are triggered as hell and give them the third degree or a nutrition lecture. It's similar to what happens when someone says he is an atheist.
Many Americans see anyone who doesn't agree with their approach to life as some kind of threat. I don't get it, but that's how they act.
