My former neighbor was a chef at Christianos and he made spicy olive oil and gave them out.
His process was to bring the oil to 210 degrees, add his fresh herbs, garlic and peppers. He would keep it at 210 for half an hour or so then strain it into seperate bottles.
Key is everything fresh and don't let it come to a boil.

Hijack.
I can't believe they're charging 20 for the cauliflower now. And Pizza Domenica is charging $12 for "cauliflower steak." The steak is about a 1/4 of the entire cauliflower. Such a waste of money.

I think the cauliflower steak is a far better idea than serving the whole damn head of 'flower. Who on earth can consume a whole head of cauliflower? Even a party of 6 couldn't finish it off. RE: price creep, it's everywhere these days (yet Parenton's manages to serve a two-fried-softshell-crab poboy for $11).

I can't speak to Domenica's head of cauliflower app, but when I roast cauliflower (in small pieces), I can eat a whole head! It shrinks up a lot and those caramelized bits are heaven. I can't stop myself.

Dominica's isn't cheap to make with the use of all the olive oil though it can be used multiple times.
