The Wheel Of Time series by Robert Jordan.
Unlike Game Of Thrones, you won't have to wait for the author to finish it and hope that it happens before he dies. Because it's already finished... despite the fact that Jordan already died before completing it.

Umberto Eco The Prague cemetery
The name of the rose
The Foucault pendulum
Javier Sierra The secret supper
All well grounded in history with conspiracies thrown in. Albigensians, Leonardo, the inquisition, Dreyfus affair and more.

Few suggestions similar to Game of Thrones:
The Blade Itself (First Law Trilogy) - Joe Abercrombie - clever, gruesome, graphic, great characters. And unlike GoT it has an ending already.
Demon Cycle - Peter Brett - entertaining series all-around. More on the PG / young adult side of the spectrum but still very dark.
Name of the Wind - Patrick Rothfuss - addictive! But beware, Rothfuss looks to be just as bad as George RR at leaving his fans waiting. Seems to be in no rush to move the series along despite ending the last book in an emotional slump.
And then, ANYTHING by Brandon Sanderson is genius. This guy is incredibly talented with plot twists and humor. And best of all he's a fast writer and doesn't take 8 f-ing years to put out the next book of a series!

I MIGHT be wrong, it's been awhile. But I know he gets knighted in Patriot Games and I'm pretty sure there's a remark from a British sailor calling him "Sir Ryan" in Red October.
Don't quote me on that, or do, I don't give a shite.

I second the Wheel of Time series. The last few books (which Jordan didn't write) were pretty bad but you almost feel like you have to read them by the time you get to them.
I've also enjoyed a couple of James Patterson series. The Private and Michael Bennet books are quite entertaining.

Temeraire Series
"Temeraire is a series of novels written by American author Naomi Novik. The novels are works of both fantasy and alternate history: they are "a reimagining of the epic events of the Napoleonic Wars with an air force—an air force of dragons, manned by crews of aviators".[1] The first book, His Majesty's Dragon, won the 2007 Compton Crook Award in the (science fiction/fantasy) genre.[2] The book was also nominated for a Hugo Award for Best Novel in 2007."
Great Series, I'm no dungeons and dragons guy but I really enjoyed the books.

You would like the century trilogy. Start with the first book "Fall of Giants."

I thought Brandon Sanderson did a pretty good job of finishing the series over the last 3 books. The last 4 books that Jordan wrote were the worst of the series IMO.

Others not already suggested:
The Raven's Shadow Trilogy by Anthony Ryan
quote:
Vaelin Al Sorna was only a child of ten when his father left him at the iron gate of the Sixth Order. The Brothers of the Sixth Order are devoted to battle, and Vaelin will be trained and hardened to the austere, celibate, and dangerous life of a Warrior of the Faith. He has no family now save the Order.
The Night Angel Trilogy by Brent Weeks
quote:
For Durzo Blint, assassination is an art-and he is the city's most accomplished artist.
For Azoth, survival is precarious. Something you never take for granted. As a guild rat, he's grown up in the slums, and learned to judge people quickly - and to take risks. Risks like apprenticing himself to Durzo Blint.
But to be accepted, Azoth must turn his back on his old life and embrace a new identity and name. As Kylar Stern, he must learn to navigate the assassins' world of dangerous politics and strange magics - and cultivate a flair for death.

I Am Pilgrim is a unique spy-ish thriller that will be a series when the next one arrives (and a movie franchise as well). Movies will be Matthew Vaughn.
Red Sparrow and the follow up novel are Russia-centric spy novels and probably the absolute best thing going in the genre right now. Also will be a movie franchise (Francis Lawrence) perhaps with JLaw.

Bernard Cornwell
-Sharpe Series: Follows a soldier from the India wars through the Napoleonic campaigns
-Warlord Chronicles: Currently a series on BBC, set in early England, think Game of Thrones without the magic. Outstanding IMO

Harry Potter + Stephen king = The Magicians by Lev Grossman LINK
Also, Kingkiller Chronicles by Patrick Rotfuss is as close to the fun of the first 3 Game of Thrones books melded with Harry Potter as you'll come, but BEWARE as the author has written the first two books but decided to leave us hanging forever for the 3rd. LINK
