Anyone here keep deer ribs?

If so, how do you prepare them? We've always thrown them away, but I figure there has to be a way to save them.

I've smoked deer ribs before. They are really good just not as meaty as pork ribs.

Low and slow? Did you trim all the fat and silver skin off?

I do from time to time. I usually don't trim it much. Sometimes I boil them before hand then bake or put on grill. Usually pretty tasty but sometimes I am not sure if it's worth the effort.

Best way I've done them is to boil the hell out of them then finish on the grill. You have to make sure to remove the membrane

On the nice mature bucks it's worth saving, like he said boil the mess out of them first in a brine and pepper water with chicken broth. Then smoke or grill them. Good stuff

We keep them and use them to bring in the coyotes.

The last I ate were fried, they were good but left a waxy aftertaste if that makes sense. I guess they weren't trimmed properly.

We normally don't keep any but one year we did keep one set and had each side cut into 4 parts. Froze them and used in spring/summer for crab bait. Cheaper than melt or chicken.

I smoke at 225-250 like pork ribs, but pull them off at 2-2.5 hours instead of 3.5. They're skinny, but they have flavor. Woman even eats a few.
Or cut off the bones and fry for long skinny deer fingers.
I like to drink beer and man cooking apparatuses in the offseason though so it gives me a cheaper run at it.

I have had them boiled in crab boin and then tossed on the grill. Not bad.

tallow from the fat. Lamb is the same way it it isn't eaten HOT. Nasty once it starts to cool
