Old charlie 8 i agree pork flavor is great, for that I make or buy pork sausage. But for deer sausage i want to taste Venison not the pork.

On the nice mature bucks it's worth saving, like he said boil the mess out of them first in a brine and pepper water with chicken broth. Then smoke or grill them. Good stuff

What scoring system you want to yse for the estimate? If your going with B&C if scored as a typical 150 to 159 gross with a lot of deductions that is probably gonna net it back to the low to mid 140's. If you want to take it B&C non typical ill go with 154 and 5/8. If you wanna use one of the newer systems that takes every inch measurement you can find and outside spread measurements so everyone gets a trophy and participation award then yes probably in the 160's. It's all in measurement perspective folks. Lately we are not all using the same measuring stick.

Of course genetics and nutrition but the biggest factor is distance from equator. A animal species will always be it's biggest and robust at it's farthest northern range from the equator. Its just science.

SXS if your a road hunter, lease hunter, with ease of access and nice right of ways, sip bourbon while you ride and BS on the phone back and forth and at the deer stand with a cigar and cheap porn mags in the box blind.
