Use to do 60 pork 40 deer. Really suppressed the venison flavor. Never really cared for any I could make or get made at that percentage. Experimented and found that a 50 50 with a low lean meat pork sode with substantially more pork fat on that 50 really helped the Venison flavor pop. So now im 50/...

On the nice mature bucks it's worth saving, like he said boil the mess out of them first in a brine and pepper water with chicken broth. Then smoke or grill them. Good stuff...

What scoring system you want to yse for the estimate? If your going with B&C if scored as a typical 150 to 159 gross with a lot of deductions that is probably gonna net it back to the low to mid 140's. If you want to take it B&C non typical ill go with 154 and 5/8. If you wanna use one of the newe...
