I'm going to have to go with steak. Most versatile. Butter knife probably gets used more, but not really in a "knife" capacity. So I'd have to say steak knife is my favorite.

I make knives from 3/8s stock.

They arent pretty yet, but they can stab through the hood of a truck.

Kershaw Skyline. I have a griptilian and a delica and they are fine knives but I find myself carrying the skyline more often because it is lighter weight and has a flipper. You will not be disappointed.

I bought an Ernest Emerson handmade CQC 6 with Micarta scales and titanium bolsters back in the 90's while I was in the Marines. Still own it to this day and it's the finest knife I've ever laid my hands on and it's been all over the world wherever I have been . Several companies make a more affordable Emerson model nowadays including Emerson Knives.

I have a Remington folding Pocket Knife that was my Grandfathers'.

I think they stopped producing them in 1937.
