Vegetarian options in New Orleans (Update)

Friends are visiting the city next week and one girl is a vegetarian. I know it's a tough call.. but what options are available for lunch? Any suggestions are much appreciated, and desperately needed! TIA

Carmo is good and has mostly vegetarian options, but does have other things.
Seed is a strictly vegetarian or vegan place I think.

Indian, Arabic and Persian restaurants will have lots of vegetarian options.

I'd definitely go Shaya. Especially since she is just vegetarian and not vegan. Regardless, I'd definitely go for a "regular" restaurant and not a vegan one.
I have a few vegan friends, and two of them (they're dating) go to NOLA often just to hit up the strictly vegan restaurant, Seed. I'm sure it's tasty enough, but the menu is mostly substitutes for meat/dairy dishes. I feel like I'd rather go to a restaurant whose food just happens to contain a lot of meatless items rather than a place that is trying to mimic meat throughout their menu.
Plus, going to a normal spot means everyone else in the group can eat meat.

So we picked Carmo on Julia Street. My friends are from New York and I thought it would be fun to check out some galleries and walk around a bit after lunch.
Carmo has some really nice South American fruit juice selections that everybody liked. I had the Esmerelda salad which is a selection of Mexican veggies with jalapenos and quinoa and the vegetable soup of the day, which was really good.
The diners were a combination of beatniks and business people and we had a great lunch. Thanks for the suggestions. F&D Board Rules
